Oat & Seed Power Jars

I’m so excited to share these little power jars with you, because they are truly something you need in your refrigerator at all times. Whatever your life throws at you, you probably need a little bit of goodness and power to get through it. Which is why there is absolutely nothing better than little jars of seeds and oats to make the best snack, pre- or post- workout bite, breakfast, late night spoonful of yum, or even nutritious dessert. (Add cacao powder!) These jars are loaded with plant-based goodies, protein, healthy fats, fiber, vitamins, minerals, and so much more to get you feeling positively powerful and glow-worthy.
So what makes up a power jar? As you may have guessed: oats and seeds, plus a little something extra. Power, or just good old energy, is all thanks to the foods we consume. But do you know what takes up a lot of energy/power? Digestion. It’s an essential process, but a totally taxing one for our insides. This is why I love, love, love soaking things like nuts, seeds, and oats. As they soak away, their starches begin to break down which truly improves their digestibility. Not only that, but phytic acid – a nutritional inhibitor, is reduced as well as other enzyme inhibitors. Even better, amino acids within the nuts and seeds begin to break down, making their protein that much easier to absorb. All that soaked goodness is further broken down when you blend them into a creamy oat and seed raw porridge making the digestive process a breeze.
Power Powder.
An extra hint of power found in these little jars is thanks to the addition of plant-based protein powder. We’ve discussed protein powder before – and I’ve told you all about how I used to think the stuff was completely icky and reserved solely for gym meatheads. Spoiler alert– it’s not all bad stuff. In fact, you can find excellent products made of quality ingredients if you want to get a little more protein in your day – hi vegans and veg-heads! Oat & Seed Power Jars
Makes 2 small, or 1 large jar
¼ cup rolled oats
¼ cup buckwheat groats
1 tablespoon chia seeds
1 tablespoon flax seeds
1 handful of sunflower seeds
1 handful of raw unsalted pumpkin seeds
1 teaspoon sesame seeds
1 ½ cups filtered water
2 tablespoons Sunwarrior Plus Vanilla protein (optional)
¼ teaspoon cinnamon
1 cup unsweetened nut milk
3 medjool dates, pitted
Fresh fruit, seeds, or nuts to top
Method:
In a large bowl or jar add in rolled oats, buckwheat, seeds, and water. Stir to combine and let sit overnight, or for at least 8-10 hours.
In the morning, drain water and place oat and seed mixture in a very fine mesh sieve to thoroughly rinse. Place oat & seed mixture in a blender along with almond milk, protein powder, cinnamon, and dates. Pulse gently until seeds and oats are broken down and into desired consistency. For thicker texture, pulse less.
Scoop oats into small jars, or one large one. Refrigerate jars until ready to eat – they’ll keep 2-3 days. Top jars with extra nuts, seeds, seasonal fruits, and any other superfood goodie you would like. Enjoy!
