Beet, Orange, Carrot, & Ginger Juice

So, I’ve been shopping around for a juicer. First of all, it just sounds so magical to be able to make homemade fresh juice whenever I want without having to run to a juice bar and shell out $10-$12 for a teeny-tiny, cold-pressed juice. For $10, I can buy all the juice ingredients and make 3x the amount of juice!

But then I started to read about juicers….oy. Apparently, they’re expensive, finicky to clean, and contain a thousand and one parts. Plus there are multiple kinds of juicers, different styles of juice rendered, and a whole host of reviews swearing allegiance to either one kind of juicer vs. another. Because typing that stressed me out, suffice to say, I have not yet purchased a juicer.

The good news is, that if you’re like me and don’t own a juicer, you can still make fresh juice with your high-speed blender. Blending the wazoo out of the ingredients and further straining them through a fine-mesh sieve or nut-milk bag creates a tasty, silky-smooth, and nutritiously superior drink that comes together with common kitchen supplies – rather than that finicky juicer.

Juice, as you know, is one of the hottest health tickets around – with good reason. When you juice a fruit or veggie, its fibers are all stripped away. The result is a concentrated tonic filled with vitamins, minerals, and enzymes that can be easily absorbed into your bloodstream – allowing your bod to process all the goodness from those fruits and veg quicker and with less digestive strain.

This Beet, Orange, Carrot, & Ginger Juice is a tasty one. Not only is it absolutely beautiful, (hello beet phytonutrients!) but it’s bursting with delicious and juicy pick-me-up flavors. Fresh squeezed oranges add the most refreshing taste, while immune-boosting Vitamin A rich carrots and antioxidant loaded apple sweeten the deal, and ginger adds the perfect digestive boosting powers and spicy kick. The beets are the total stars of this juice, and offer detoxifying abilities, iron, Vitamins A, C, & B6, folic acid, and tons of other antioxidants too. Plus, beet juice has even been shown to reduce blood pressure, due to its ability to relax and dilate blood vessels in the body. This juice is great to have with your meal, or as a quick-afternoon refresher when you need an energy boost.

Beet, Orange, Carrot, & Ginger Juice

Makes a little over a liter of juice

2 medium organic beets, scrubbed and roughly chopped
1 bunch of small carrots, chopped (about 6-7 carrots)
1 organic apple, chopped (I used fuji)
1 inch piece of fresh ginger, peeled
6 oranges, freshly juiced

In a high-speed blender add in the juice of 6 oranges, ginger, apple, carrots, and beets. Blend on high for about 20-30 seconds until veggies and fruits are completely broken down.

Pour blended juice through a nut-milk bag or fine-mesh strainer and into a large bowl. Use a rubber spatula, or your hands (they WILL be stained for a bit*) to squeeze out all the juice from the pulp.

Pour fresh juice into an airtight glass container and store in the refrigerator. You can drink the juice right away or let it chill in the refrigerator. Juice is best consumed within 12-24 hours!

Notes/ if you use your hands to squeeze the pulp and juice out of a nut milk bag – your hands WILL get stained red. A good scrub with soap and water should do the trick – but be warned!

Discard the pulp in your compost, or save it for a future smoothie. It can be easily frozen and added to your next beet inspired smoothie.
