There is really nothing better than waking up to a fresh cup of coffee and a prepared breakfast. No hassle, no pots, no pans, no mixing, measuring, pouring, chopping, and especially no dishes…yay! Sure you could reach for a frozen waffle and pop it in the toaster, grab a faux-healthy granola bar, or pour some dry cereal into a bowl; but these all sound rather boring and they probably have weird additives, sugar out the wazoo, and other nasties too.
You should just make this instead.
Overnight oats are one of the best breakfasts you can have in the morning when you’re on the go, or trying to do a million things at once. Made the night before, O.O’s are stored in a jar or container and are super portable; so you can chow down happily on the morning subway ride surrounded by the jealous glances from hungry onlookers.
Nutritionally, O.O.s are far more superior to lousy breakfasts, like frozen waffles or dry cereal, as they are filled with plant proteins and plenty of fiber for healthy digestion. Oats also stabilize blood sugar and lower cholesterol levels in your body, making O.O.s the perfect morning meal to get your day going. These guys also pack in more fiber with chia seeds, and plenty of healthy fats and Vitamin E from the almond milk and almond butter.
These O.O.s have the most perfect and creamy almond and banana texture in every bite. I inhaled this recipe the first time I made it, and couldn’t wait to make a bigger batch to saver for the rest of the week’s breakfasts…and as a lovely afternoon snack…perhaps dessert too. Now I have it probably 3-4 times a week!

Almond Butter & Banana Overnight Oats
Serves 1
1 ripe banana, mashed
2 big T almond butter
½ cup rolled oats
½ cup unsweetened almond milk
1 T chia seeds
½ tsp cinnamon
Simply place all ingredients in a jar or bowl and stir to combine. Cover and refrigerate overnight. Enjoy in the morning!
Optional toppings: more banana, cacao nibs, almonds, honey, or any other nut, seed, and fruit.
This will keep 2-3 days in the refrigerator as well, so feel free to make a big batch.
Just a few questions…what is the minimum amount of time it needs to be left in the refrigerator before eating? How long after it is ready to eat can you leave it in the refrigerator – (a couple of days? a week?)

The oats need to sit in the refrigerator at least 7-8 hours to absorb all the liquid and turn creamy and delicious.
Once you make them they will keep for at most 4 days! :)
