You will always find bananas in my kitchen; I eat them daily! The delicious creaminess and sweetness of bananas make them excellent in baking, pancakes, vegan ice cream, oatmeal, and smoothies. Bananas are also a great source of energy and a perfect on the go snack.

Store bananas at room temperature to ripen. Although bananas can be eaten very yellow if you prefer the taste, they are much sweeter and softer when brown spots begin to appear. Not to mention, bananas with brown spots are much easier on the stomach for digestion, as the banana’s natural sugars have begun breaking down.

Don’t throw away brown bananas! Bake them into breads, muffins, or cookies, or slice them up and store in the freezer for the best addition to smoothies or banana ice cream.
