Maple Vanilla Pecan Granola

Do you want to stop buying sugary store bought granola? (It’s SO expensive and filled with additives and icky things!)

Do you want to have a delicious snack or a healthy and crunchy addition to your yogurt, smoothies, or breakfast?

Do you want your kitchen to smell like paradise/bliss/heaven?

Do you have a lot of bulk oats lying around because the store was having a special of 59 cents per pound and you went a little oat crazy?

Yes?!

I’m thinking the last question is all me, but if you nodded your head to any of the others…then you need to make this delectable granola right now!

This maple vanilla pecan granola is pure nutty, sweet, toasty, warm goodness. Sure the name might be a mouthful, but it’s worth every last syllable.

This granola is especially tasty (I’m not biased) and packed with super nutritious goodies. The crisped oats still hold strong to their fiber content, the pecans add healthy fats and a nutty flavor, hemp seeds pack in more protein, coconut oil ramps up the healthy fats, chia is an awesome crunchy super seed, and the vanilla bean makes me want to dance; it just tastes and smells THAT good.

I love having this granola as a filling and energizing breakfast with coconut yogurt and fresh fruit. It also tastes delicious with homemade almond milk and a bit of sliced banana coins. Throw in on a smoothie bowl or baggie it up for your kids – it tastes amazing in anything and everything!

Maple Vanilla Pecan Granola

3 cups rolled oats (gluten-free if necessary)
1 cup chopped pecans
¼ cup chia seeds
½ cup hemp seed hearts
1 vanilla bean, split and scraped
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon sea salt
4 tablespoons coconut oil, melted
½ cup maple syrup

Preheat oven to 300° F and line a baking tray with parchment paper.

In a large bowl mix together oats, pecans, chia seeds, hemp seed hearts, vanilla bean, spices, and salt.

In a separate bowl add maple syrup and coconut oil, stirring until combined.

Pour coconut oil and maple mixture onto dry oat ingredients and mix thoroughly.

Spread granola on lined baking tray and bake in oven for 45 minutes, stirring every 15 minutes or so, to prevent burning.

Remove from oven and let granola cool for 15 minutes, and then store in large airtight container. Enjoy!
