Wild Blueberry and Coconut Popsicles

Summer’s not over yet! There’s still time to cool off with one of the season’s most mouthwatering and refreshing treats of all time: popsicles.

In my childhood, popsicles only existed in the summertime. Did anyone even purchase popsicles at any other time of the year? Why would you? Popsicles could be found stocked up in the freezer in our garage where my brothers and I would pluck out our favorites, race down to the backyard pool (which was always colder than popsicles), and drip sugary-sweet popsicle syrup all down our chins while we went. Oh, the magic of summertime.

My favorite popsicle of choice? The sugar sweetened treats that had the joke on the stick, of course. Flavor shmavor – I just wanted a good joke. In fact, popsicles without a slapstick joke always seemed to be a bit of a letdown to my childhood self. Now, let’s be honest; any popsicle is a huge letdown to my adult self. The sugar, the artificial-ness, the crazy chemical ingredients – no thank you. I’d rather just make my own, and write my own jokes.

The good news is that making your own popsicle is the easiest thing in the world. In fact, make any sort of smoothie that you love – put it in a popsicle mold – and ta-da, a popsicle! This recipe is a bit more technical, as it involves layers, but it is just as simple and delicious. The layers are made up of creamy coconut, which is filled with body loving healthy fats like lauric acid, along with juicy and sweet wild blueberries, which are bursting with antioxidant superpowers. This particular popsicle uses wild blueberries, which are much smaller than regular blueberries, but pack in more antioxidants and an intense taste. You can, of course, use regular old blueberries too! Together, coconut and blueberries along with some other wholesome ingredients are pure late summertime magic.

Creamy Coconut + sweet raw honey + vibrant wild blueberries + sweet banana = nutritious, simple, and a zillion times better than store-bought, sweet summer popsicles.

Wild Blueberry & Coconut Popsicles

Makes 6 popsicles

Coconut Layer:
¾ cup full fat coconut milk
½ banana
1 teaspoon raw honey

Blueberry Layer:
1 cup wild blueberries
½ banana
2 tablespoons full fat coconut milk

Method:

Prepare the coconut layer first. In a blender combine coconut milk, ½ banana, and raw honey. Blend until incorporated, about 30 seconds. Carefully pour coconut mixture into half of each popsicle mold. Place in the freezer and let set 30-60 minutes.

While coconut layer is chilling, prep the blueberry layer. Place blueberries, ½ banana, and coconut milk into a blender and blend until combined about 30 seconds. If mixture is too thick – add in a bit more coconut milk. Remove popsicle molds from freezer and pour blueberry mixture on top of coconut mixture. It’s OK if the coconut hasn’t completely set, this will create a fun blending effect between layers. If you want a distinct division between layers, however, allow coconut layer to set for a longer period of time.

Insert popsicle sticks into the molds and freeze for at least 6-8 hours or overnight. When ready to enjoy a popsicle, set the whole mold into a large bowl of warm water. Allow popsicles to sit for 10-20 seconds, and then gently remove from the mold. Enjoy!
