Blueberry Lavender Chia Jam
in Recipes
The abundance of summer produce is a very good thing. It is especially wonderful when it involves cartons of farm fresh blueberries and homegrown lavender.
Having fresh jam around the house is a really fantastic way to consume more fruit and fiber in a creative and delicious meal. Really, the only thing better than homemade blueberry jam is homemade blueberry jam that’s versatile, and has lavender in it too.
For instance, you can use this jam for:
Bread & toast
As a perfect accompaniment to an antipasti plate
For the most delicious pb&j
On sandwiches & a unique grilled cheese
Breakfast goodies like pancakes, French toast, waffles, oatmeal & overnight oats
Baked goods such as cookies and cakes
Chia seed pudding
Yogurt
Smoothies
Vinaigrettes & marinades
Drinks & cocktails
See, versatility is a good thing in the kitchen. So are the additions of fiber, cell-loving antioxidants, and nutritious healthy fats onto every dish you top this jam with.
Blueberry Lavender Chia Jam
Inspired by The Naked Fig.
2 T dried lavender
4 T boiling water
1 cup blueberries
2 T chia seeds
2 T honey
Bring water to a boil, add in dried lavender and let steep for 5-10 minutes. Strain lavender water through a fine-mesh sieve or cheesecloth and set aside.
In a food processor or blender, combine blueberries, chia seeds, honey, and lavender water. Blend until combined. Stir and let sit for a few minutes to allow jam to thicken.
Store in an airtight container in the refrigerator. Enjoy!
Hi, I love your recipes! I have a 15 month old who i cook all his foods for him, so i love getting ideas from your site! I was wondering how long this will stay good in the fridge for? I wanted to make a homemade jam to start giving him almond butter and jelly sandwiches for an easier meal!
