Cherry Cardamom Overnight Oats

Cherry season is here and overnight oats season never ends! We are definitely combining the two.

Cherries are one of my favorite fruits, which is a big bummer because they’re only available once a year. When cherry season finally arrives with hot summer days I try to eat as many as I can while they’re still at their peak. I tend to go a little cherry crazy.

This is nothing new, I’ve been this way all my life: a no-nonsense cherry fanatic.

In fact, I love cherries so much that I’ve probably consumed close to 200 cherry pits in the course of my lifetime. Not intentionally of course. It just took me a while to master the spitting of cherry pits, and swallowing them just happened unintentionally. You should have seen me with watermelon seeds…I was an embarrassment to my two brothers.

Nowadays, I’m still cherry crazy and I have no issues with the seeds. Phew!

Adding cherries to a creamy oat base with the slightest hint of citrusy, floral, and bold cardamom spice is a great way to take advantage of cherry season…and to attempt to eat them at every. single. meal.

Cherry Cardamom Overnight Oats

½ cup rolled oats
1 T chia seds
1/8 tsp ground cardamom
½ cup almond milk
½ cup fresh cherries, pits removed
Pinch of sea salt
Small handful of unsalted pistachios

Place oats, chia seeds, salt, and cardamom in a small bowl or jar. Set aside.

In a blender or food processor combine almond milk, and cherries and blend until smooth. Pour blended mixture over oats and stir until oat mixture has been covered.

Store in the refrigerator overnight and enjoy in the morning! Top with fresh cherries, a dollop of yogurt, a drizzle of honey, and a handful of unsalted pistachios if desired.
