Cheers to the last recipe of 2022: a delectable vegan cacao peppermint smoothie that’s so decadent that it could technically be a nutrient-dense and plant-based milkshake. It’s also a perfect recipe for the holiday season – or truly any time of year you want a special mint and chocolate treat.
I am very much a creature of habit and I love to start every morning with a filling smoothie that contains protein, healthy fats, fiber, and greens. Not only do I not have to think about what to make for breakfast (because: hello tiny new baby-induced sleep deprivation), I love starting my day with something so filling and blood sugar stabilizing. Plus, I love sharing my smoothie with my toddler to make sure she’s getting some nutrient-dense ingredients in her morning as well.
This smoothie is a fun change up from my usual blueberry and spinach smoothie situation. It’s made with frozen banana and cauliflower rice, cacao powder, flax seeds, peppermint extract, chocolate tahini, collagen, and Supergut Gut Balancing Fiber Mix, a smoothie secret weapon.
Containing 8 grams of prebiotic fiber (from unripened green bananas, oat beta glucan, resistant potato starch, and soluble vegetable fiber), Fiber Mix can help to balance post-meal blood sugar as well as feed the beneficial bacteria in our gut. Along with ample fiber, this cacao peppermint smoothie recipe also delivers antioxidants (thanks to cacao powder), healthy fats from flax seeds and tahini, and blood-sugar balancing protein found in collagen. Peppermint extract provides a essential touch of minty flavor and a pinch of sea salt brings all the flavors together – trust me, don’t skip it!
I like to serve this smoothie with a scoop of coconut yogurt on top, as well as a drizzle of chocolate tahini and finely chopped dark chocolate or cacao nibs if I want to enjoy this smoothie as a sweet and healthy treat. Vegan Cacao Peppermint Smoothie
Serves 2
Prep time: 10 minutes
Ingredients:
1 banana, frozen
1 cup frozen cauliflower rice
2 Tbsp. cacao powder
1 (0.4 oz) package supergut Fiber Mix
2 Tbsp. flax seeds
1/4 tsp. sea salt
2 Tbsp. chocolate tahini (or swap for tahini, cashew butter, or almond butter)
1/4 tsp. peppermint extract
1-2 scoops unflavored collagen
2 cups unsweetened almond milk
To garnish:
1-2 Tbsp. unsweetened coconut yogurt
1-2 Tbsp. chopped dark chocolate or cacao nibs
A drizzle of chocolate tahini
Optional add-in’s:
1 cup baby spinach
1/2 small avocado
Directions:
1. Add all ingredients to a high-speed blender.
2. Blend on high for 30-45 seconds, or until smoothie is thick and creamy.
3. Pour smoothies into two glasses and top with coconut yogurt, a drizzle of chocolate tahini, and chocolate or cacao nibs. Enjoy immediately!
