Crispy Cauliflower Lettuce Wraps with Sesame Ginger Vinaigrette

Is cauliflower still super trendy? I’d like to think yes!

I know that we’ve all had cauliflower in rice, gnocchi (TJ’s frozen cauliflower gnocchi, anyone?), oats, pizza crust, and then some, but I promise there’s still delicious ways to enjoy this versatile cruciferous vegetable: lettuce wraps!

These Crispy Cauliflower Lettuce Wraps with Sesame Ginger Vinaigrette are seriously delicious – and make for a seriously simple and wholesome dinner. Packed with plenty of cauliflower goodness, crisp lettuce, crunchy cabbage, and tangy Annie’s Organic Sesame Ginger Vinaigrette in every single bite, these wraps are SO good – and SO easy. My husband and I have been loving making these wraps for a simple dinner, and loading them with all sorts of delicious toppings. The drizzle of Annie’s on top? Holy moly, it’s the perfect ginger-loaded bite.

Ok back to everyone’s favorite veggie.

Cauliflower is basically a power veg. It’s packed with tons of vitamins and minerals, yet very low in carbohydrates. In roughly one cup of cauliflower you get roughly 77% RDI Vitamin C, 20% RDI Vitamin K, as well as impressive amounts of vitamin B6, folate, potassium, magnesium, and fiber. Cauliflower is also an amazing source of several antioxidants. Like other cruciferous vegetables (kale, cabbage, and broccoli, for example), cauliflower is high in the antioxidants glucosinolates and isothiocyanates. These two groups have been shown to slow the growth of cancer cells, particularly in colon, lung, breast, and prostate cancer. Cauliflower also contains sulforaphane, an antioxidant associated with reduced blood pressure and suppressing cancer growth.

In this recipe, cauliflower gets the double-roasting treatment in the oven. It’s first roasted until nice and crispy, and super tender. Then, we pour a garlic and ginger sauce overtop and return the cauliflower to the oven. There, the cauliflower gets sticky, crispy, and impossibly tasty. It won’t even taste like cauliflower – and that’s a good thing.

Roasted crispy cauliflower gets lovingly stuffed inside crisp lettuce wraps with shredded purple cabbage, a squeeze of zesty lime, cilantro, and Annie’s Organic Sesame Ginger Vinaigrette: my favorite part of the lettuce wrap! Crispy Cauliflower Lettuce Wraps with Sesame Ginger Vinaigrette

Serves 2-4

Ingredients:
3 cups cauliflower florets
1 tbsp. avocado oil
1/2 tsp. sea salt
1/2 tsp. black pepper
1 clove garlic, minced
1 Tbsp. fresh lime juice
1/2 tsp. fresh grated ginger
4 Tbsp. coconut aminos
4 Tbsp. toasted sesame oil
6-8 pieces curly lettuce or iceberg lettuce
1 handful cilantro, chopped
1/2 cup shredded purple cabbage
1/4 cup Annie’s Organic Sesame Ginger Vinaigrette
1 lime, cut in wedges, to serve

Directions:

1) Preheat oven to 450 degrees Fahrenheit.
2) Line a baking tray with parchment paper.
3) Add cauliflower to baking tray and drizzle with avocado oil. Sprinkle with sea salt and pepper. Roast cauliflower for 20 minutes.
4) While cauliflower roasts, whisk together garlic, ginger, lime juice coconut aminos, and toasted sesame oil until thick and creamy.
5) Remove cauliflower from oven and drizzle with sesame oil mixture. Toss to combine.
6) Return cauliflower to oven and cook for 5-8 more minutes, or until cauliflower is crispy. Watch cauliflower carefully so it doesn’t get too overcooked!
7) Prepare lettuce wraps: stuff individual curly leaf or iceberg lettuce leaf with roasted cauliflower, cilantro, and purple cabbage. Add a squeeze of fresh lime and drizzle with Annie’s Organic Sesame Ginger Vinaigrette and devour!
