Vegetable and Four-Potato Frittata

Introducing the simplest, wholesome, and nutrient packed frittata ever. Calling all easy breakfast, lunch, and snack lovers, this one’s for you.

Filled with colorful vegetables, leafy greens, organic eggs, and hearty Dr. Praeger’s Four Potato Hash Browns, this vegetable frittata is an easy and delicious way to enjoy a nourishing and delicious meal, all while using up lingering veggies in your fridge.

Confession. I’m one to let vegetables overextend their welcome in my produce drawer. Collard greens? I’ll get around to using those. Bell peppers and jalapenos? They’ll be fajitas, one day. Don’t even get me started on jicama and beets. Most of the time, vegetables get buried under the mass of leafy greens that I have in my refrigerator at all times (kale takes up A LOT of space!), or other times I’m just not sure how to incorporate them into a meal.

This vegetable loaded frittata solves all my problems, and then some. Not only does it use up lost and leftover vegetables in my fridge, it takes care of the leafy green surplus, and gets a bump of hearty flavor from Dr. Praeger’s Four Potato Hash Brown. Basically, it’s a win-win.

Four Potato Power

Along with vegetables, leafy greens, and organic eggs, this frittata is packed with savory and hearty Four Potato Hash Browns from Dr. Praeger’s. No, these are not the overly salted and industrial oil loaded hash browns of fast-foodom, these are hash browns made with non-GMO, gluten-free, vegan, and Kosher ingredients. Bam.

Dr. P’s Four Potato Hash Browns are made with a blend of red bliss potatoes, Yukon gold potatoes, purple potatoes, and sweet potatoes. Potatoes, FYI are underrated vegetables packed with all the good stuff. These tubers are rich in vitamin C and B6, potassium, fiber, and iron, too.

In this frittata, Dr. Praegar’s hash browns are shredded after roasting in the oven and added to sautéed vegetables and Swiss chard. I love how each and every bite of frittata provides a burst of flavor from savory potatoes, sweet bell peppers, and flavorful chard. It’s truly a delicious bite – warm or cold!

Bonus, this frittata is adaptable to whatever vegetables you may have (lingering) on hand. Add in mushrooms, roasted squash or Brussels sprouts, tomatoes, or any other veg or herbs. Vegetable and Four-Potato Frittata

Serves 4-6

Ingredients

4 Dr. Praeger’s Four Potato Hash Browns
1 ½ Tablespoons avocado oil
2 cloves garlic, minced
¼ red onion, diced
½ red bell pepper, diced
½ green bell pepper, diced
1 small zucchini, diced
3 leaves chard, stems removed and roughly chopped
6 eggs
½ teaspoon dried oregano
¼ teaspoon red chili flakes
Sea salt and pepper, to taste

Directions

Preheat oven to 450 degrees Fahrenheit.

Place four Dr. Praegar’s hash browns on baking tray and bake for five minutes. Remove from oven, flip, and bake an additional five minutes. Remove from oven once cooked and set aside.

To a medium-size skillet, add avocado oil and heat over medium heat. Add garlic and onion and sauté for 5 minutes. Add in bell pepper and zucchini, and sauté for 5 minutes longer.

Stir in chopped chard and sauté until wilted. At this time, add cooked hash browns to skillet. Use a spatula to break apart hash browns and distribute through vegetable mixture. Turn heat off of skillet.

Reduce oven temperature to 350 degrees Fahrenheit.

In a small bowl, whisk eggs. Add in oregano, chili flakes, and sea salt and pepper. Whisk to combine. Pour egg mixture into vegetable skillet and move skillet around to make sure eggs are evenly distributed.

Cook frittata 12-17 minutes, or until set. Remove from oven and let cool slightly before cutting in. Cut frittata into pieces and gobble up! Alternatively, frittata can cool completely and be stored in an airtight container in the refrigerator for up to five days. Enjoy warm or cold!
