Grilled Peach Caprese Salad

In my perfect world, peaches would be available year round.
There would be no conflicts in the Middle East and elsewhere.
I could find homes for every single animal shelter pup.
Organic would be the norm.
Soda and energy drinks would be nonexistent.
Piperlime would send me all of their things.
I would own a home in every continent.
And my legs wouldn’t grow hair. Ever.
Oh, how perfect that would be.
Unfortunately, the world is less than perfect and (good) peaches are only available for a few short months…and I still have to shave my legs. Ugh.
When peaches are in season I like to use them in a variety of ways: baked in desserts, raw in oatmeal, smoothies, salads, and banana ice cream and grilled of course! Grilling peaches is one of the most delectable ways to use this summer fruit. The heat brings out the natural sweetness and juiciness of the peach and caramelizes it to perfection. Pairing it with creamy mozzarella, bright basil, olive oil, and tangy balsamic vinegar will make you wish that peaches were available year round too.

Grilled Peach Caprese Salad
2-3 peaches, sliced into ½ inch thick rounds
1 T honey
1 (8oz) ball of fresh mozzarella, sliced
A handful of fresh basil
Freshly ground sea salt and pepper
2 T olive oil
1 T balsamic vinegar
Preheat grill to medium/high heat. Drizzle peaches with honey and grill for 3 minutes per side. Remove peaches from the grill and let cool for a few minutes (so they don’t melt the cheese!)
Arrange peaches, sliced mozzarella, and leaves of fresh basil on a plate. Drizzle with olive oil and balsamic vinegar and sprinkle with freshly ground sea salt and pepper. Enjoy!
