Strawberry Beet Smoothie

When its 109 degrees outside (hello summer in Arizona!) I don’t want to cook. I don’t want to turn on an oven, pull out a pan, or heaven forbid – eat something hot. Nooo.
I just want something cold, simple, delicious and filing. Not to mention, I want something I can make fast without pulling out a pan or making a mess of dishes.
I can be quite demanding. It must be the heat?
Enter smoothies: glorious, versatile, creamy, refreshing, and satisfying smoothies.
This strawberry beet smoothie is heavenly! (It’s not the heat talking, I swear!) Strawberries and beets are the freshest and most mouthwatering combination, plus they yield the prettiest pink color when combined – thanks to all those powerful plant phytonutrients. Juicy, succulent strawberries and creamy banana sweeten this smoothie, while it still holds on to the perfect undertone earthiness of beetroot, so it’s not overly sweet. This recipe is packed with powerful cell-happy antioxidants from the beets and strawberries, plus the potassium of the nanner and coconut water, and the healthy dose of fat from coconut oil to assist in absorbing all the glorious vitamins and nutrients in your bod.
So the next time you refuse to turn on a stove, and you feel cranky and heat-exhausted, make this pink pick me up instead.
Strawberry Beet Smoothie
Makes 2 small servings, or 1 large serving
½ cup coconut water
1 cup strawberries, chopped & frozen
1 banana, frozen
1 small/medium beet; scrubbed, ends trimmed, and roughly chopped*
1 T coconut oil
Combine all ingredients in a blender, and blend on high until smooth and creamy for about 2 minutes. (Beet chunks in a sweet smoothie are a bit unappetizing…and I’m a girl who loves beets!)
If you want a sweeter smoothie, add in a date or two, or a tablespoon of honey to taste.
*If you do not have a high-speed blender, and don’t think your blender will handle the raw power of beets, simply steam cut up beat beforehand. Chop up beet and steam for 5 minutes. Make sure to cool at least 20 minutes in the refrigerator so you don’t have a lukewarm smoothie.
In reference to beets reducing blood pressure – I have extremely low blood pressure which results in ocular migraines. I add salt to everything per doctor’s orders. How will adding beets effect someone that tries to raise their blood pressure like me? I also have severe Glaucoma and eat a very healthy, balance diet. Thank you.
