Because, it’s been a while since a cookie recipe has appeared on VK, and because…_cookies_.

These salted cashew butter chocolate chunk cookies are the dream. Made with cashew butter, coconut sugar, an egg, flaky sea salt, and dark chocolate chunks, they’re simply delicious and crazy healthy, too.

You’ll see in the recipe list that these cookies do not have any flour, unlike a traditional cookie recipe. Somehow, the magic of baking cashew butter along with an egg and coconut sugar creates a soft, chewy cookie with the most perfect texture ever – sans flour. Plus, going flourless keeps these cookies naturally gluten and grain free, too.

Crazy for Cashews.

Cashew butter is a totally delicious cookie ingredient. Creamy with a rich, buttery flavor, cashew butter truly elevates cookies. Plus, cashews and cashew butter are a delicious whole food filled with minerals, healthy fats, and antioxidants.

Cashews are good sources of copper, phosphorus, manganese, magnesium, and zinc, as well as heart-protective monounsaturated fats and antioxidants. Cashews, along with other nuts, are a superior addition to your diet and their consumption is associated with a decreased risk of coronary artery disease, hypertension, gallstones, diabetes, cancer, metabolic syndrome, and visceral obesity. Cashews are delicious eaten by the handful, or blended into a creamy butter. Make your own cashew butter by blending up raw cashews in a food processor or high-speed blender, or snag a jar at your local health food market or online. My favorite cashew butter is from Artisana Organics, and I love getting them from Amazon!

Along with creamy cashew butter, these cookies are loaded with big chunks of dark chocolate and flaky sea salt. You can either purchase dark chocolate chunks in a bag, or get a bar of dark chocolate and chop it up into generously sized chunks for your cookies – yum. This is my personal favorite method, FYI.

Sprinkle your cookies with flakes of sea salt, bake, cool ever so slightly, and devour, devour, devour! They’re delicious warm with a big glass of coconut or almond milk. I hope you love them as much as I do!

Creamy cashew cookies + dark chocolate chunks + flaky sea salt + sweet coconut sugar = the chewiest, healthiest, cashewiest cookies ever.

Salted Cashew Butter Chocolate Chunk Cookies

Yields 10 Cookies

1 cup cashew butter
½ cup coconut sugar
1 egg
1 tsp vanilla extract
½ tsp baking soda
½ generous cup dark chocolate chunks or chips
Flaky sea salt, to garnish

Directions

Preheat oven to 350 degrees Fahrenheit and line a baking tray with parchment paper.

In a small bowl combine cashew butter, coconut sugar, egg, baking soda, and vanilla. Mix well to fully combine.

Fold in chocolate chunks or chips until just combined.

Scoop a tablespoon of cookie dough and form into a ball. Place on lined baking tray and repeat with remainder of cookie dough. Make sure that cookies are adequately spaced, as they will spread!

Sprinkle each cookie with a pinch of flaky sea salt.

Bake cookies for 12-15 minutes, or until edges are golden. Remove from oven and let cool completely before storing. Enjoy!

Store cookies at room temperature in a single layer, or in the fridge for up to 4 days. I personally love keeping mine in the fridge for a chewy, delicious texture.
