This baked oatmeal recipe is absolutely delicious and is just perfect for those summer mornings when it’s not quite warm, but not quite cold, and just a bit cool and crisp. You know, the mornings where autumn is about to break and you can almost feel the season changing in the air?

If you’ve felt that philosophical morning feeling, make this Blueberry Banana Baked Oatmeal for breakfast straight away. Grab those local blueberries that have been a staple in your refrigerator, and give them one last summer hurrah…because a summer hurrah is especially necessary on mornings when it philosophically and totally feels like fall.

This simple baked oatmeal will take you no time at all to prepare, (give or take 10 minutes) and is a delicious breakfast or brunch that everyone will enjoy. Once they bake into the creamy oatmeal, the blueberries turn into bursting warm bites of goodness, while the banana adds another layer of creaminess and sweetness. Coconut flakes and raisins provide a sweet and juicy bite while walnuts provide a tasty crunch. Of course, all these goodies will fill you up with all sorts of nutritional benefits too, from the brain-boosting omega-3’s in walnuts to plenty of digestive maintaining fiber from the oats. Blueberries and raisins amp up the antioxidants and bananas provide plenty of potassium.

Blueberry Banana Baked Oatmeal

Serves 4

1 ½ cup rolled oats
2 cups boiling water
2 ripe bananas: 1 banana mashed & 1 banana sliced into coins
1 cup blueberries
¼ cup raisins
¼ cup walnuts, chopped
¼ cup coconut flakes
½ cup almond or coconut milk
1 T cinnamon
Pinch of sea salt

Preheat oven to 375° F.

In a large bowl pour 2 cups boiling water over rolled oats. Stir to combine and let oats sit until all water has been absorbed, about 5-10 minutes.

Once water is fully absorbed add in the remainder of the ingredients and stir to combine.

Pour into a baking dish and bake in the oven for about 20 minutes, until top begins to lightly brown.

Serve with a handful of coconut flakes. Enjoy!
